Trellis-trained with replacement cane – pruned (Guyot) and Vertical Shoot Position.
Marl and clay.
Gentle pressing and temperature control during fermentation. Settling on the lees for a minimum of 4 months with frequent batonnage brings more complexity.
Lemon in colour, its aroma has fresh and fruity overtones, including litches, apricot, peach and raspberry as well as bread tree flowers. Shades of spicy white pepper and acacia honey mingle together in the background. The enveloping Riesling structure is attenuated by acid and sapid sensations, giving refined nuances on the palate and an exotic touch to the finish.
